Red Lentil Soup

Damp clearing recipe




Ingredients

  • 2 cups red lentils, soaked and drained

  • 1 L of chicken stock (can be replaced with vegetable stock)

  • 1 boullion cube (I used chicken, vegetable is okay as well)

  • 1 can chopped tomatoes

  • 1 large onion - chopped

  • 2 large carrots - chopped

  • 3 garlic cloves - chopped

  • 1.5 tsp cumin

  • 1 tsp rosemary

  • 2 dry bay leaves

  • Salt - to taste

  • Juice of 1 lemon

  • Zest of 1 lemon

Optional:

  • Parmesan, pumpkin seeds, corriander to garnish

  • Toasted bread to dip


Method


1) Heat some oil in a pot on medium heat. Add onions, garlic and carrots. Cook for 5-8 minutes or until soft.

2) Add cumin, rosemary oregano and bay leaves. Stir through for 30 seconds.

3) Add canned tomatoes, chicken/vegetable stock and bouillon cube. Bring to boil, then reduce heat to simmer for approximatley 20 minutes or until lentils are fully cooked (ensure lentils are fully cooked to ensure the soup doesn't taste "gritty" after blending)

4) Once cooked, remove from heat and allow to cool to a warm temperature. Pulse the soup with an immersion blender to a puree or consistently of choice.

5) Serve soup in a bowl and garnish with coriander, parmesan and pumpkin seeds.

Effects: Supplements qi and blood


Oregano:

Thermal Nature: Neutral to warm

Flavour: Slightly pungent, bitter

Effects: Stimulates digestion, circulates qi, clear wind-heat


Rosemary:

Thermal Nature: Warming

Flavour: Bitter, pungent

Effects: Stimulates digestion, clears damp and cold, disperses wind, resolves phlegm


Cumin:

Thermal Nature: Warming

Flavour: Sweet, pungent

Effects: Stimulates digestion, warms centre burner, specifically works on the Spleen and Liver channels


Onion:

Thermal Nature: Warming

Flavour: Pungent, sweet

Effects: Moves qi, loosens phlegm, clears damp, expels cold


Garlic:

Thermal Nature: Warming to hot

Flavour: Pungent

Effects: Moves qi, clears damp, loosens phlegm


Bay Leaves:

Thermal Nature: Warming

Flavour: Pungent, Bitter

Effects: Stimulates Digestion, clears damp
